- 2 stalks celery, thinly sliced, about 1 cup (120 g)
- 1 small red onion, finely chopped, about 1/2 cup (75 g)
- 3/4 cup (180 ml) mayonnaise
- 2 tbsp (30 ml) yellow mustard
- 1 tbsp (15 ml) Dijon mustard
- 2 tbsp (30 ml) apple cider vinegar
- 1 tsp (5 ml) granulated sugar
- 1/2 tsp (2.5 ml) kosher salt, plus more to taste
- 1/4 tsp (1.25 ml) freshly ground black pepper
- 2 tbsp (8 g) chopped fresh flat-leaf parsley
- 1-2 tsp (2-4 g) Old Bay seasoning, plus more for garnish
- 1 tbsp (15 ml) olive oil (optional, for sheen)

1. Place cut red potatoes in a large pot and cover with cold water by 1 inch (2.5 cm). Add 1 tsp (5 ml) kosher salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 10–12 minutes. Drain and let cool slightly.
2. Meanwhile, place eggs in a small pot, cover with cold water, bring to a boil, then remove from heat and let sit, covered, for 10 minutes. Drain, cool under cold running water, peel, and chop.
3. While potatoes and eggs cool, combine mayonnaise, yellow mustard, Dijon, apple cider vinegar, sugar, 1/4 tsp (1.25 ml) kosher salt, and black pepper in a bowl. Whisk until smooth and taste; adjust salt, pepper, or vinegar for brightness.
4. When potatoes are warm but not hot (this helps them absorb dressing), transfer to a large mixing bowl. Add chopped eggs, sliced celery, and chopped red onion. Pour the dressing over the mixture and gently fold to coat, taking care not to mash the potatoes.
5. Stir in chopped parsley and 1–2 tsp (2–4 g) Old Bay seasoning. If desired, drizzle 1 tbsp (15 ml) olive oil and fold for a glossy finish.
6. Cover and chill the potato salad at least 1 hour (preferably 2–4 hours) to let flavors meld. Before serving, adjust seasoning and sprinkle additional Old Bay on top as a final garnish.
7. Serve cold or at cool room temperature as a salad course or side; keeps refrigerated for up to 3 days.
