- 1 1/2 cups (300 g) piloncillo, chopped (or 1 1/2 cups / 300 g dark brown sugar)
- 2 cups (475 ml) water
- 2 cinnamon sticks (canela)
- 3 whole cloves
- 1 strip orange peel (about a 3-inch / 7 cm strip)
- 2 tbsp (30 ml) fresh orange juice
- Pinch of salt
- 1 tbsp (14 g) unsalted butter (optional, for sheen)

Short Description:
A classic Yucatecan dessert of green (unripe) papaya simmered in piloncillo and cinnamon until the fruit becomes soft, translucent, and syrupy-sweet. It is served chilled or at room temperature as a preserve-like sweet.

Regional Notes:
This Yucatan version uses green papaya (unripe papaya) and piloncillo (unrefined cane sugar) with warm canela (cinnamon) and orange peel for a fragrant, lightly spiced syrup; the texture is more like a preserve than a fresh fruit compote. Using green papaya and piloncillo is characteristic of the peninsula and distinguishes it from ripe-papaya desserts elsewhere in Mexico.

1. Prepare the papaya: Peel the green papaya, halve and scoop out the seeds, then cut into 1/2-inch (1.2 cm) cubes. Rinse briefly and drain.
2. Make the syrup: In a wide saucepan combine the piloncillo (or brown sugar) and 2 cups (475 ml) water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.
3. Add spices and flavor: Add the cinnamon sticks, whole cloves, orange peel, orange juice, and a pinch of salt. Reduce heat and simmer the syrup 5–8 minutes to infuse.
4. Cook the papaya: Add the papaya cubes to the saucepan, stir gently to submerge, reduce heat to low, and simmer uncovered (or partially covered) until the papaya is tender and translucent and the syrup has thickened, about 30–40 minutes. Stir occasionally to prevent sticking; add up to 1/2 cup (120 ml) water if the syrup reduces too quickly before the papaya is tender.
5. Finish: When the papaya is soft and the syrup coats each piece, remove from heat. Discard the cinnamon sticks, cloves, and orange peel. If using, stir in 1 tbsp (14 g) unsalted butter for a glossy finish.
6. Cool and serve: Let the dulce cool to room temperature, then transfer to a jar or covered dish and chill. The syrup will thicken further as it cools. Serve chilled or at room temperature on its own, spooned over vanilla ice cream, or with a dollop of crema if desired.
