- 1/2 cup (120 ml) whole milk
- 2 large eggs (approx. 100 g total)
- 1 tsp (5 ml) vanilla extract
- 1–2 tbsp (15–30 ml) pure maple syrup (optional, for subtle regional note)
- Pinch of flaky sea salt for finishing (optional)

Unlike some Quebec tarte au sucre variations that use maple syrup or corn syrup prominently, this version centers on brown sugar and local cream to produce a denser, cream-forward filling unique to the region.
1. Make the crust: In a medium bowl stir together flour, salt, and sugar. Cut in cold cubed butter with a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized pieces.
2. Sprinkle ice water, 1 tbsp at a time, and gently mix until dough holds when pressed. Do not overwork. Form into a disk, wrap, and chill 30 minutes.
3. Preheat oven to 375°F (190°C). Roll chilled dough on a lightly floured surface to fit a 9-inch (23 cm) pie plate. Transfer to plate, trim and crimp edges. Chill 10 minutes.
4. Blind-bake crust: Line crust with parchment and fill with pie weights or dried beans. Bake 15 minutes, remove weights and parchment, then bake 5–7 minutes more until just set and lightly golden. Reduce oven temperature to 350°F (175°C).
