- 1/4 tsp (1.25 g) freshly ground black pepper
- 2 tbsp (28 g) unsalted butter
- 2 tbsp (30 ml) neutral oil (canola or grapeseed)
- Lemon wedges, for serving
- Quick lemon-mustard aioli for serving:
  - 1/3 cup (80 g) mayonnaise
  - 1 tsp (5 ml) fresh lemon juice

2. In a large bowl combine 1 lb (450 g) crab meat, 1/2 cup (60 g) panko, 1/4 cup (60 g) mayonnaise, 1 tbsp (15 ml) mustard, the lightly beaten egg (approx. 50 g), chopped parsley, chives, minced shallot, 1 tsp (5 ml) lemon juice, Old Bay, 1/2 tsp (2.5 g) salt and 1/4 tsp (1.25 g) pepper.
