Regional Notes:
In Aguascalientes, nopales are commonly grilled with just a touch of lime and salt so the cactus flavor remains front and center; unlike versions with heavy salsas or stews, this Bajio style is pared-down and served as a refreshing accompaniment to grilled meats and beans. Light charring and a squeeze of fresh lime are the key regional touches.

1. Prepare the nopales: using a sharp knife or vegetable peeler, remove any remaining spines and the rough edges from the pads, then rinse under cold water. If pads are very large, trim and cut each into 2 or 3 pieces so they lie flat on the grill.
2. Pat the pads dry with paper towels. In a shallow bowl, toss the nopales with the oil, 1 tsp coarse salt, and black pepper (if using) so they are lightly coated.
3. Preheat a gas or charcoal grill to medium-high (about 450-500 F / 230-260 C). Oil the grill grates or brush a little oil on the pads to prevent sticking.
4. Grill the nopales (and onion rings, if using) directly over the heat. Cook 3-5 minutes per side, turning once, until well charred in places and the pads have softened. Total grill time will be about 6-10 minutes depending on thickness.
5. Transfer grilled nopales to a platter. While still warm, sprinkle with a little additional coarse salt to taste and squeeze the juice of 1 lime evenly over them.
6. Garnish with fresh cilantro leaves and, if desired, scatter crumbled queso fresco or panela over the top. Serve with lime wedges on the side.
7. To serve: present as a side alongside grilled meats, beans, or tortillas; leftovers keep 1-2 days refrigerated in an airtight container and can be lightly reheated on a hot skillet or eaten cold.
