- 1 cup (120 g) celery, diced (about 2 stalks)
- 1 cup (160 g) sweet corn kernels, fresh or thawed frozen
- 1/2 cup (30 g) fresh flat-leaf parsley, chopped
- 3 green onions, thinly sliced (white and green parts), approx. 30 g
- 4 tbsp (60 ml) extra-virgin olive oil
- 3 tbsp (45 ml) apple cider vinegar
- 1 tbsp (15 ml) lemon juice, freshly squeezed
- 1 tbsp (15 ml) Dijon mustard
- 1 tsp (5 ml) honey or granulated sugar
- 1 tsp (5 g) kosher salt (adjust to taste)
- 1/2 tsp (2.5 g) freshly ground black pepper
- 1/4 tsp (1 g) cayenne pepper or a few dashes hot sauce (optional)

1. If you need to cook rice: rinse 1 cup (190 g) long-grain white rice under cold water until water runs clear.
