Regional Notes:
This is the Maryland pit beef version: a lean roast seared quickly over an open charcoal pit (or very hot grill) and sliced very thin while still warm, served on kaiser rolls with a horseradish-based sauce and raw onions. Unlike slow-smoked barbecue, pit beef is fast-seared to rare/medium-rare and eaten thinly sliced rather than pulled.

1. Prepare the roast: Pat the top round dry with paper towels. Rub the roast with oil, then evenly coat with kosher salt, black pepper, garlic powder, and onion powder. Let rest at room temperature 30–45 minutes while you prepare the fire.
2. Build a charcoal pit or grill for very high heat: bank charcoal on one side for an intense coal bed and leave the other side cooler (two-zone fire). You want a hot searing zone of glowing coals and an area to move the roast if flare-ups occur. Aim for a grill grate surface temperature of 500–700°F (260–370°C).
3. Sear over coals: Place the roast directly above the hottest coals and sear on all sides to develop a dark crust, about 3–4 minutes per side. Rotate so all faces get a good char—this is the characteristic pit-beef exterior.
4. Finish to rare/medium-rare: After searing, move the roast to the cooler side of the pit (indirect heat) and continue cooking until an instant-read thermometer inserted into the thickest part reads 120–125°F (49–52°C) for rare or 130°F (54°C) for medium-rare, about 10–20 minutes depending on roast size and heat. Avoid overcooking—pit beef is traditionally served thinly sliced and still pink.
5. Rest briefly and slice very thin: Transfer roast to a cutting board and tent loosely with foil; rest 8–10 minutes to let juices redistribute but remain warm. Using a very sharp knife (or a meat slicer if available), slice roast as thin as possible across the grain.
6. Make the horseradish sauce: In a bowl whisk together mayonnaise, prepared horseradish, sour cream (or Greek yogurt), lemon juice, Worcestershire sauce, salt, and pepper. Add water 1 tbsp at a time if you prefer a thinner spreadable sauce. Taste and adjust horseradish for heat.
7. Optional quick slaw: Toss shredded cabbage and carrot with apple cider vinegar, sugar, and salt; let sit 10 minutes while assembling sandwiches.
8. Assemble sandwiches: Split kaiser rolls and toast cut sides briefly over the grill if desired.
