Ingredients
- 2 salmon fillets, approx. 8 oz (225 g) each
- 3 tbsp (45 ml) unsalted butter, melted
- 1 tbsp (15 ml) olive oil
- 2 tbsp (30 ml) fresh lemon juice
- Zest of 1 lemon
- 2 garlic cloves, minced
- 3 tbsp (24 g) panko breadcrumbs
- 2 tbsp (8 g) fresh dill, chopped
- 1 tsp (5 g) kosher salt
- 1/2 tsp (1 g) freshly ground black pepper
- 1 tbsp (12 g) brown sugar (optional for a light glaze)
- 1 cedar plank (optional, for grill or oven use)
- Lemon wedges, for serving
Instructions
1. Preheat the oven to 400°F (200°C). If using a cedar plank, soak it in water for at least 30 minutes. Line a baking sheet with foil if not using a plank. Pat the salmon dry and place skin-side down on the plank or prepared sheet.
2. In a small bowl, combine melted butter, olive oil, lemon juice, lemon zest, minced garlic, brown sugar (if using), salt, and pepper. Brush half the mixture evenly over the salmon. In another small bowl mix panko and chopped dill, then sprinkle over the salmon and drizzle remaining butter mixture on top.
3. Bake the salmon in the preheated oven for 12–16 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 125–130°F (52–54°C) for medium. If using a cedar plank on a grill, cook over medium heat covered for about the same time.
4. Remove from oven or grill, let rest 2–3 minutes, then serve with lemon wedges and additional fresh dill.
