Ingredients

- 1 lb (454 g) ground beef
- 1 large egg, approx. 1.75 oz (50 g)
- 1 cup (120 g) panko breadcrumbs
- 1/2 cup (120 ml) whole milk
- 1 cup (160 g) finely chopped white onion
- 2 cloves garlic, minced
- 1 tbsp (15 ml) soy sauce
- 1/2 tsp (2.5 g) kosher salt
- 1/2 tsp (1 g) black pepper, freshly ground
- 2 tbsp (30 ml) vegetable oil
- 3 tbsp (45 ml) ketchup
- 2 tbsp (30 ml) soy sauce (for sauce)
- 1 tbsp (14 g) unsalted butter (for sauce)

Instructions

1. Combine panko and whole milk in a small bowl and let soak 5 minutes; squeeze lightly to remove excess milk and reserve.
2. In a skillet over medium heat, sauté chopped white onion and minced garlic in 1 tbsp vegetable oil until soft and translucent; cool slightly.
3. In a large bowl, mix ground beef, soaked panko, egg, sautéed onion mixture, 1 tbsp soy sauce, salt, and black pepper until just combined; form into four even patties.
4. Heat remaining 1 tbsp vegetable oil in a skillet over medium heat. Cook patties 4–5 minutes per side until browned and internal temperature reaches 160°F (71°C); reduce heat if browning too quickly.
5. For the sauce, combine ketchup, 2 tbsp soy sauce, and butter in a small saucepan; warm until butter melts and sauce is glossy.
6. Serve patties with sauce spooned over top.
