Ingredients
- 1 lb (454 g) ground beef
- 4 large brown eggs, approx. 7 oz (200 g) total
- 1 medium white onion, diced, about 6 oz (170 g)
- 3 cloves garlic, minced (approx. 0.5 oz / 15 g)
- 1 cup (240 ml) tomato sauce
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (12 g) brown sugar
- 2 tbsp (30 ml) vegetable oil
- 4 cups (960 ml) cooked white rice
- 2 medium ripe plantains or cooking bananas, peeled and sliced (optional), about 8 oz (225 g)
- Salt and pepper to taste
Instructions
1. Heat 1 tbsp oil in a skillet over medium heat; sauté onion and garlic until softened. Add ground beef and cook until browned, breaking up pieces.
2. Stir in tomato sauce, soy sauce, and brown sugar; simmer 8–10 minutes until sauce thickens. Season with salt and pepper to taste.
3. In another pan, heat remaining oil and fry plantain slices until golden (if using). In a separate skillet, fry eggs sunny-side-up or to preference.
4. Serve a scoop of rice with a generous portion of the ground beef, top with a fried egg and plantains on the side.
