Ingredients

- 1 lb (454 g) ground beef
- 1 large brown egg, approx. 1.8 oz (50 g)
- 1/2 cup (120 ml) panko breadcrumbs
- 1/4 cup (60 ml) milk
- 1 small white onion, finely chopped, about 4 oz (115 g)
- 2 cloves garlic, minced (approx. 0.2 oz / 5 g)
- 1 tbsp (15 ml) soy sauce
- 1 tsp (5 g) salt
- 1/2 tsp (2 g) ground black pepper
- 2 tbsp (30 ml) vegetable oil
- 2 tbsp (30 g) butter
- 1/4 cup (60 ml) ketchup
- 2 tbsp (30 ml) Worcestershire sauce
- 1 tbsp (15 ml) soy sauce (for sauce)
- 1/4 cup (60 ml) water (for sauce)

Instructions

1. Combine the ground beef, egg, panko, milk, chopped onion, minced garlic, 1 tbsp soy sauce, salt, and pepper in a bowl; mix gently until just combined and form into four even patties.
2. Heat vegetable oil in a large skillet over medium heat; add patties and sear 3–4 minutes per side until browned. Reduce heat to low, add butter, cover, and cook 6–8 minutes until cooked through (internal temp ~160°F / 71°C).
3. Remove patties and keep warm. In the same skillet, combine ketchup, Worcestershire, 1 tbsp soy sauce, and water; simmer 2–3 minutes to thicken slightly.
4. Return patties to skillet, spoon sauce over them and simmer 1–2 minutes to glaze. Serve hot.
