- 1.5 lb (680 g) ground beef - 1 cup (120 g) fresh breadcrumbs - 1/2 cup (120 ml) milk - 1 large egg (approx. 50 g) - 1 medium yellow onion, chopped (about 6 oz / 170 g) - 2 garlic cloves, minced (approx. 6 g) - 1 cup (125 g) grated carrot - 8 oz (225 g) button mushrooms, sliced - 1/2 cup (120 ml) ketchup, plus 1/4 cup (60 ml) extra for glaze - 2 tbsp (30 ml) Worcestershire sauce - 1 tsp (5 g) kosher salt - 1/2 tsp (2.5 g) black pepper - 1 tbsp (15 ml) olive oil - 4 cups (approx. 200 g) shredded iceberg lettuce (for side) - 1 medium tomato, sliced (about 5 oz / 140 g) (for side)
1. Preheat the oven to 350°F (175°C). In a skillet, heat olive oil over medium heat and sauté chopped onion and minced garlic until softened, about 4 minutes. Add grated carrot and sliced mushrooms and cook until vegetables are tender and any liquid has evaporated, about 5–6 minutes; remove from heat and cool slightly. 2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, cooled vegetable mixture, 1/2 cup ketchup, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Form into a loaf and place in a lightly oiled loaf pan or on a baking sheet. 3. Spread remaining 1/4 cup ketchup over the top of the loaf. Bake in the preheated oven until internal temperature reaches 160°F (71°C), about 55–65 minutes. Let rest 10 minutes before slicing. 4. Serve slices of meatloaf with shredded iceberg lettuce and tomato slices on the side.
