Ingredients

- 2 medium whole crabs, cleaned and cut into halves (approx. 1.5 lb / 680 g total usable crab)
- 3 tbsp (45 ml) mustard oil
- 1 tsp (5 g) mustard seeds
- 1 large onion, finely chopped — about 6 oz (170 g)
- 1 tbsp (15 g) ginger paste
- 1 tbsp (15 g) garlic paste
- 2 tbsp (30 g) white mustard seeds, soaked 15 minutes and ground to a paste with 2 tbsp water
- 1 tbsp (9 g) poppy seeds (posto), soaked 15 minutes and ground to a paste with 2 tbsp water
- 1 medium tomato, chopped — about 5 oz (140 g)
- 2 green chilies, slit (adjust to taste)
- 1/2 tsp (2 g) turmeric powder
- 1 tsp (3 g) red chili powder (adjust to taste)
- 1 tsp (2 g) coriander powder
- 1/2 tsp (1 g) cumin powder
- 1/2 cup (120 ml) water
- 1 tsp (5 ml) tamarind pulp or juice (or 1 tsp lemon juice) for gentle tang
- Salt to taste
- Fresh cilantro, chopped for garnish (no measurement)

Instructions

1. Rinse and clean the crabs well; pat dry and set aside. Prepare mustard and poppy seed pastes by grinding soaked seeds with a little water to a smooth paste.
2. Heat mustard oil in a heavy skillet or kadhai over medium heat until smoking point is reached, then reduce heat to medium. Add mustard seeds and let them splutter.
3. Add chopped onion and sauté until soft and translucent, about 6–8 minutes. Add ginger and garlic pastes and cook 1–2 minutes until raw aroma subsides.
4. Stir in the mustard paste and poppy seed paste; cook 2–3 minutes, stirring so the mixture does not stick. Add turmeric, red chili powder, coriander, and cumin powders and cook another minute.
5. Add chopped tomato and green chilies; cook until tomato softens and oil begins to separate from the masala, about 4–5 minutes.
6. Toss in the crab pieces to coat them thoroughly with the spice mixture. Add 1/2 cup (120 ml) water, cover, and simmer gently for 8–10 minutes until crab is cooked through and flavors marry.
7. Stir in tamarind pulp or lemon juice and adjust salt; simmer uncovered 1–2 minutes to adjust consistency—jhola should be a light, saucy gravy.
8. Garnish with chopped cilantro and serve hot with steamed rice or traditional Odia rotis.
