Ingredients
- 12 oz (340 g) fresh Chinese wheat noodles or fresh egg noodles
- 8 oz (225 g) pork tenderloin, thinly sliced
- 1 large egg, beaten (approx. 50 g)
- 2 tbsp (30 ml) vegetable oil
- 1 tbsp (15 ml) sesame oil, divided
- 2 tbsp (30 ml) light soy sauce, divided
- 1 tbsp (15 ml) dark soy sauce
- 1 tbsp (15 ml) oyster sauce
- 1 tbsp (15 ml) Shaoxing wine or dry sherry
- 1 tsp (3 g) cornstarch
- 1 tsp (5 g) sugar
- 1 medium onion, thinly sliced (about 6 oz / 170 g)
- 2 cloves garlic, minced (about 8 g)
- 1 tbsp (6 g) fresh ginger, minced
- 2 cups (150 g) shredded napa cabbage
- 1 cup (70 g) bean sprouts, rinsed
- 2 scallions, sliced (about 20 g)
- 1/4 tsp (0.5 g) white pepper
- Salt to taste
Instructions
1. Marinate the pork: combine pork slices with 1 tbsp light soy sauce, 1 tsp cornstarch, and 1/2 tsp sesame oil. Let rest 10–15 minutes.
2. Blanch or briefly boil the fresh noodles in salted water until just al dente, 30–60 seconds if fresh (follow package if needed). Drain and toss with 1/2 tsp sesame oil to prevent sticking.
3. Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add the beaten egg and scramble quickly until just set; remove and keep warm.
4. Add the remaining 1 tbsp vegetable oil to the wok. Stir-fry the marinated pork over high heat until just cooked through, 1–2 minutes. Remove and set aside.
5. In the same wok, add a touch more oil if needed, then add onion, garlic, and ginger. Stir-fry 1–2 minutes until fragrant and the onion softens.
6. Add shredded cabbage and bean sprouts; stir-fry 1–2 minutes until vegetables are tender-crisp.
7. Return pork and scrambled egg to the wok. Add noodles and pour in dark soy sauce, remaining 1 tbsp light soy sauce, oyster sauce, Shaoxing wine, and sugar. Toss everything together over high heat until noodles are well coated and heated through, 1–2 minutes.
8. Adjust seasoning with white pepper and salt as needed. Stir in sliced scallions and a final drizzle of sesame oil. Serve immediately.
