- 2 lb (907 g) ground pork - 1 lb (454 g) cooked ham, finely chopped - 1 cup (120 g) fine dry breadcrumbs or crushed saltine crackers - 1 cup (240 ml) milk - 1 medium onion, finely chopped, about 6 oz (170 g) - 2 large eggs - 2 tbsp (30 ml) yellow mustard (plus extra for glaze) - 2 tsp (10 g) kosher salt - 1 tsp (5 g) black pepper - 1 tsp (2 g) dried thyme - 1 tbsp (15 ml) Worcestershire sauce - 2 tbsp (30 ml) melted butter or oil (optional, for richness) - For the glaze: - 1/2 cup (100 g) packed brown sugar - 3 tbsp (45 ml) yellow mustard - 2 tbsp (30 ml) ketchup - 1 tbsp (15 ml) apple cider vinegar - 1 tsp (5 ml) Worcestershire sauce
1. Preheat oven to 350°F (175°C). Lightly grease a 9x5 inch (23x13 cm) loaf pan. 2. In a large bowl, soak breadcrumbs in milk until absorbed, about 5 minutes. Add ground pork, chopped ham, chopped onion, eggs, 2 tbsp (30 ml) mustard, salt, pepper, thyme, Worcestershire sauce, and melted butter if using. Mix gently until just combined—do not overwork. 3. Transfer mixture to prepared loaf pan and press to an even top. Smooth with a wet spatula. 4. Blend glaze ingredients (brown sugar, 3 tbsp (45 ml) mustard, ketchup, vinegar, Worcestershire) until smooth. Spread about half of the glaze evenly over the top of the loaf. 5. Bake in preheated oven 50–60 minutes. About 15 minutes before done, brush remaining glaze over loaf and continue baking until an instant-read thermometer inserted into center reads 160°F (71°C) and glaze is set. 6. Remove loaf from oven and let rest 10 minutes in pan before turning out. Slice and serve warm with remaining pan juices or extra glaze on the side.
