Ingredients
- 1 lb (454 g) ground bison
- 1 small yellow onion, finely chopped, approx. 4 oz (115 g)
- 1 tsp (5 ml) Worcestershire sauce
- 1 tsp (5 ml) Dijon mustard
- 1/2 tsp (2.5 g) kosher salt
- 1/2 tsp (1 g) freshly ground black pepper
- 1 tbsp (15 ml) vegetable oil for cooking
- 4 hamburger buns (brioche or potato-style)
- 1 tbsp (15 g) butter for toasting buns
- 4 slices cheddar cheese (optional)
- Lettuce leaves, as needed
- 1 medium tomato, sliced, approx. 6 oz (170 g)
- Dill pickle slices, as needed
- Ketchup and mustard, to taste
Instructions
1. In a bowl gently combine ground bison, finely chopped onion, Worcestershire sauce, Dijon mustard, kosher salt, and black pepper; mix just until combined — avoid overworking the meat.
2. Divide mixture into 4 equal portions and shape into patties about 3/4 inch (2 cm) thick, making a slight indentation in the center of each to prevent doming.
3. Preheat a grill or heavy skillet to medium-high and brush grates or pan with 1 tbsp (15 ml) vegetable oil.
4. Cook patties 3–4 minutes per side for medium-rare to medium, or longer to desired doneness; add a slice of cheddar during the last minute and cover to melt if using.
5. Meanwhile, butter and toast buns in a separate skillet or on the grill until golden, about 1 minute per side.
6. Assemble burgers on toasted buns with lettuce, tomato slices, pickles, ketchup and mustard, and serve immediately.
