Ingredients
- 2 live hairy crabs, approx. 8 oz (225 g) each
- 1 cup (240 ml) Shaoxing wine, plus extra for rinsing crabs
- 1 tbsp (15 ml) light soy sauce (for cleaning step, optional)
- 4 cups (960 ml) water for steaming
- 1 cup (240 ml) Chinkiang (black) vinegar or aged black rice vinegar
- 2 tbsp (30 ml) light soy sauce (for dipping sauce)
- 1/3 cup (80 ml) finely shredded fresh ginger (julienned)
- 1 tbsp (12 g) granulated sugar
- 2 stalks scallion, finely sliced (white and green parts separated)
- 1 small Chinese steamed bun or plain steamed white rice per person, for serving (optional)
Instructions
1. Prepare crabs: place live crabs in a large bowl and rinse briefly with cold water. Optionally rinse with a splash of Shaoxing wine and a little light soy sauce to remove surface impurities, then pat dry with paper towels. Tie legs with kitchen twine or use elastic bands to keep claws secure for steaming.
2. Make dipping sauce: in a small bowl combine black vinegar, 2 tbsp light soy sauce, sugar, and most of the shredded ginger (reserve a little ginger and some scallion whites for garnish). Stir until sugar dissolves and set aside.
3. Steam crabs: set up a wok or large pot with a steaming rack and bring 4 cups water to a rolling boil. Place crabs belly-side up on the rack (to keep juices), cover, and steam over high heat for 12–15 minutes for 8 oz (225 g) crabs; increase time by 2–3 minutes for larger crabs. Turn off heat and let rest, covered, for 3 minutes.
4. Serve whole: transfer crabs to a serving platter. Serve hot with the black vinegar–ginger dipping sauce and extra shredded ginger and scallion whites on the side. Provide small picks or crab crackers for guests to extract meat and roe.
5. Optional finishing: some prefer to add a splash of warm Shaoxing wine to the finished dipping sauce or to the cracked crab shell before eating to accentuate aroma.
