Return to low heat, season to taste with salt, pepper, and a touch more vinegar for a gentle tang that balances rich pork. Toast the remaining 1/2 tsp caraway seeds in a dry skillet over medium heat until fragrant, 30 to 60 seconds, then lightly crush. Ladle soup into bowls and garnish with crème fraîche or yogurt (if using), chopped chives or parsley, and a pinch of toasted caraway.
