Ingredients

- 1 lb (454 g) fresh sardines, cleaned, gutted, and butterflied
- 1/2 cup (60 g) all-purpose flour for dredging
- 1 cup (240 ml) extra-virgin olive oil, plus 2 tbsp (30 ml) for onions
- 2 large yellow onions, thinly sliced (about 12 oz / 340 g)
- 1/2 cup (120 ml) white wine vinegar
- 2 tbsp (30 ml) dry white wine
- 2 tbsp (25 g) granulated sugar
- 1/4 cup (40 g) raisins
- 2 tbsp (18 g) pine nuts, lightly toasted
- 1 bay leaf
- Salt to taste (about 1 tsp / 5 g)
- Freshly ground black pepper to taste
- Lemon wedges, for serving (optional)

Instructions

1. Pat the sardine fillets dry, season lightly with salt and pepper, and dredge briefly in flour, shaking off excess.
2. In a large skillet, heat 1 cup (240 ml) olive oil over medium-high heat and fry the floured sardines in batches 1–2 minutes per side until golden and crisp; transfer to a paper towel-lined tray to drain.
3. In a separate pan, heat 2 tbsp (30 ml) olive oil over medium-low heat; add the sliced onions and a pinch of salt and cook slowly, stirring occasionally, until very soft and translucent, about 20–30 minutes.
4. When onions are soft, add the white wine and let it reduce slightly, then stir in the white wine vinegar, sugar, bay leaf, and raisins; simmer gently for 5 minutes to allow flavors to meld. Adjust salt and pepper.
5. In a nonreactive container, layer fried sardines and spoon over a generous amount of the onion mixture; sprinkle pine nuts between layers. Finish with remaining onions and pickling liquid so sardines are mostly covered.
6. Let the assembled sarde in saor cool to room temperature, then cover and refrigerate for at least 4 hours or preferably overnight to let the sweet-and-sour flavors develop. Serve at room temperature with lemon wedges.
