Ingredients

- 8 slices pork roll, approx. 1 lb (454 g)
- 4 kaiser rolls or hard rolls (about 4 oz / 115 g each)
- 4 large eggs, approx. 8 oz (225 g)
- 4 slices American or cheddar cheese, about 4 oz (115 g) total
- 2 tbsp (30 ml) butter
- 1 tbsp (15 ml) neutral oil (vegetable or canola)
- 1 tbsp (15 ml) mayonnaise (optional)
- 1 tbsp (15 ml) yellow mustard (optional)
- Salt and freshly ground black pepper
- Optional: sliced tomato or pickles for serving

Instructions

1. Preheat a large skillet or griddle over medium heat and add the oil. When hot, add pork roll slices in a single layer and cook until edges are crisp and browned, 2–3 minutes per side. Remove and keep warm.
2. In the same skillet, reduce heat to medium-low and add 1 tbsp butter. Crack eggs into a bowl and gently slide in to fry sunny-side up or cook to desired doneness; season lightly with salt and pepper.
3. Split rolls and toast cut sides in the skillet with remaining 1 tbsp butter until golden.
4. Assemble sandwiches: spread mayonnaise and/or mustard on roll bottoms if using. Place two slices of hot pork roll on each bottom roll, top with a fried egg, then a slice of cheese so it melts from residual heat. Add tomato or pickles if desired, cover with roll tops, and serve immediately.
