Ingredients

- 1.5 lb (680 g) flank steak or sirloin, thinly sliced across the grain
- 1/2 cup (120 ml) soy sauce
- 1/3 cup (75 g) brown sugar, packed
- 1/4 cup (60 ml) mirin or dry sherry
- 2 tbsp (30 ml) sake or additional mirin (optional)
- 2 tbsp (30 ml) pineapple juice (optional, for Hawaiian sweetness)
- 2 cloves garlic, minced
- 1 tbsp (15 g) fresh ginger, grated
- 1 tbsp (15 ml) sesame oil
- 2 tbsp (30 ml) vegetable oil for searing
- 1 tbsp (8 g) cornstarch mixed with 2 tbsp (30 ml) cold water (slurry)
- 2 scallions, thinly sliced, for garnish
- 1 tsp (5 g) toasted sesame seeds, for garnish
- Salt and black pepper to taste

Instructions

1. Make the marinade: In a bowl, whisk together soy sauce, brown sugar, mirin, sake (if using), pineapple juice (if using), minced garlic, grated ginger and sesame oil until sugar dissolves.
2. Marinate the beef: Place the thinly sliced beef in a shallow dish or zip-top bag and pour half of the marinade over the meat. Reserve the other half of the marinade for the sauce. Marinate in the refrigerator for at least 30 minutes and up to 4 hours.
3. Cook the beef: Heat vegetable oil in a large skillet or cast-iron pan over high heat until shimmering. Remove beef from marinade, shake off excess, and season lightly with pepper. Sear beef in batches for 1–2 minutes per side until just browned and cooked through; remove to a plate.
4. Make the teriyaki glaze: Pour the reserved marinade into the pan and bring to a simmer over medium heat. Stir in the cornstarch slurry and cook until the sauce thickens to a glossy glaze, about 1–2 minutes.
5. Combine and finish: Return the seared beef to the pan and toss briefly to coat evenly with the glaze and heat through.
6. Serve: Transfer to a platter or bowls, garnish with sliced scallions and toasted sesame seeds, and serve with steamed rice and optional Hawaiian sides.
