Ingredients
1 medium red cabbage, cored and thinly sliced
1 large tart apple, peeled and thinly sliced
1 medium yellow onion, thinly sliced
2 tbsp (30 ml) neutral oil (such as sunflower or canola)
3 tbsp (45 ml) red wine vinegar (or apple cider vinegar)
2 tbsp (30 ml) sugar or maple syrup
1 / 2 cup (120 ml) water or vegetable broth
1 bay leaf
3 whole cloves (or 1 / 8 tsp ground cloves)
1 / 2 tsp ground allspice (optional but traditional)
Salt and black pepper, to taste
Instructions
1. Warm the oil in a wide pot over medium heat. Add onion and apple; cook until softened, 5–7 minutes.
2. Add cabbage, sugar (or maple), vinegar, bay leaf, cloves, allspice, and water/broth. Season with salt and pepper, stir, cover, and simmer gently, stirring occasionally, until tender and glossy, 35–45 minutes. Adjust seasoning and vinegar to taste, then serve.
