3 ribs celery, sliced

2 tbsp (30 ml) vegetable oil
Fresh parsley, chopped (for garnish)

Instructions

1. **Brown the Lamb**: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the lamb cubes in batches, browning them on all sides. Remove lamb and set aside.
