Ingredients
- 3 lb (1.4 kg) beef roast (rump, bottom round, or silverside), trimmed of excess fat
- 2 cups (480 ml) dry red wine
- 1 cup (240 ml) red wine vinegar
- 2 cups (480 ml) water or beef stock
- 2 medium onions, sliced, approx. 10 oz (280 g)
- 2 carrots, roughly chopped, approx. 6 oz (170 g)
- 2 celery stalks, roughly chopped, approx. 4 oz (110 g)
- 6 whole juniper berries, crushed
- 6 whole black peppercorns
- 4 whole cloves
- 2 bay leaves
- 1 tsp (5 ml) mustard seeds (optional)
- 1 tsp (5 ml) salt for marinade
- 2 tbsp (30 ml) vegetable oil or lard for browning
- 2 tbsp (30 g) sugar or 2 tbsp (30 ml) dark syrup (to balance acidity)
- 1/2 cup (60 g) crushed gingerbread cookie or 2 slices dense dark rye bread, crumbled (to thicken gravy)
- 2 tbsp (30 g) unsalted butter (to finish sauce)
- 2 tbsp (30 ml) red currant jelly or plum jam (optional, to round flavor)
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup (40 g) raisins soaked in warm water or rum for serving
Instructions
1. In a nonreactive container large enough to hold the roast, combine red wine, red wine vinegar, water or stock, sliced onions, carrots, celery, crushed juniper berries, peppercorns, cloves, bay leaves, mustard seeds, and 1 tsp salt. Stir and cool if necessary.
2. Submerge the beef roast in the marinade, cover, and refrigerate. Marinate for 3 to 5 days, turning once daily to ensure even flavor and color.
3. After marinating, remove the roast and strain the marinade, reserving liquid and discarding solids. Pat the roast dry with paper towels and reserve about 1 1/2 cups (360 ml) of the strained marinade liquid for cooking; discard the rest or boil separately and reduce for other uses.
4. Heat vegetable oil or lard in a heavy Dutch oven over medium-high heat. Season the roast with salt and pepper and brown on all sides, 3–4 minutes per side, until a deep crust forms.
5. Pour the reserved 1 1/2 cups (360 ml) marinade liquid into the pot. Add additional water or stock to come about halfway up the roast if needed, about 1/2–1 cup (120–240 ml). Stir in sugar or dark syrup.
6. Bring to a simmer, cover, reduce heat to low, and braise gently for 2 1/2 to 3 hours, turning the roast once halfway through, until the meat is fork-tender.
7. Remove the roast to a cutting board and keep warm. Strain the braising liquid into a saucepan, pressing out juices from the solids, and skim off excess fat.
8. Bring the strained liquid to a gentle simmer. Whisk in crushed gingerbread cookie crumbs or crumbled rye bread to thicken, simmering 5–10 minutes until sauce is glossy and coats the back of a spoon. Stir in butter and red currant jelly or plum jam if using. Adjust seasoning with salt and pepper and add soaked raisins if desired; simmer briefly to plump them.
9. Slice the roast thinly across the grain and arrange on a platter. Spoon the warm sour gravy over the slices and serve with traditional sides such as Spätzle, potato dumplings, or red cabbage.
10. Reheat gently if serving later; Sauerbraten often improves after a day as flavors meld.
