Ingredients

- 1.5 lb (680 g) ground bison (makes four 6 oz/170 g patties)
- 1 tsp (5 g) kosher salt
- 3/4 tsp (2 g) freshly ground black pepper
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (15 ml) neutral oil (canola or vegetable) for searing
- 4 brioche or hamburger buns
- 2 tbsp (30 g) unsalted butter for toasting buns
- 4 slices cheddar cheese (optional)
- 4 leaves lettuce
- 4 tomato slices
- 1 small red onion, sliced into rings (about 1/2 cup / 75 g)
- Dill pickle slices (to taste)
- 2 tbsp (30 ml) mayonnaise
- 2 tbsp (30 ml) ketchup
- 1 tbsp (15 ml) yellow mustard

Instructions

1. Form patties: combine ground bison, salt, pepper and Worcestershire sauce in a bowl; handle lightly and divide into four equal portions, shaping each into a slightly wider-than-bun patty about 3/4 inch (2 cm) thick. Chill patties 15–20 minutes to help them hold shape.
2. Cook patties: heat a heavy skillet or grill over medium-high heat and add oil. Place patties on the hot surface and cook undisturbed 3–4 minutes per side for medium (internal temperature 160°F/71°C recommended for ground bison). If using cheese, add a slice to each patty in the last minute and cover to melt.
3. Toast buns and assemble: spread butter on cut sides of buns and toast in skillet until golden. Mix mayonnaise, ketchup and mustard to make a simple sauce. Place lettuce on bottom bun, add patty, tomato slice, onion rings and pickles, spread sauce on top bun and close. Serve immediately.
