Ingredients
- 4 injera, torn into bite-sized pieces, approx. 12 oz (340 g) total
- 4 tbsp (60 ml) niter kibbeh (Ethiopian spiced clarified butter) or unsalted butter
- 2 tbsp (30 ml) berbere spice blend
- 1 tsp (5 g) mitmita or ground chili powder (optional for extra heat)
- 1 small red onion, thinly sliced
- 1 medium tomato, chopped
- 1 tbsp (15 ml) fresh lemon juice
- 2 tbsp (30 ml) chopped fresh cilantro
- Salt to taste
- 8 oz (225 g) cooked stewed beef or tibs (optional; e.g., leftover wat or sautéed beef)
Instructions
1. Warm the niter kibbeh in a small skillet over low heat until melted, then stir in the berbere and mitmita (if using) and cook 30–45 seconds until fragrant. Remove from heat.
2. Place the torn injera in a large bowl. Pour the spiced niter kibbeh over the injera and toss gently to coat, breaking larger pieces as you mix so the bread soaks the spiced butter.
3. Add the sliced onion, chopped tomato, cooked stewed beef or tibs (if using), lemon juice, cilantro, and salt. Toss lightly until evenly combined and the juices are absorbed.
4. Taste and adjust seasoning with more berbere, lemon, or salt as needed. Serve immediately while slightly warm.
