Ingredients

- 2 lb (900 g) cow foot, cut into chunks (usable weight)
- 1 tsp (5 g) potash (kaun) dissolved in 2 tbsp (30 ml) warm water
- 3/4 cup (180 ml) red palm oil
- 2 tbsp (14 g) ground crayfish
- 1 tsp (2 g) ground calabash nutmeg (ehuru)
- 2 scotch bonnet peppers, finely chopped
- 1 small red onion, finely chopped
- 1 small white onion, sliced for garnish
- 1 beef bouillon cube (approx. 8 g), crumbled
- 1/2 tsp (2.5 g) ground white pepper
- 1/2 tsp (2.5 g) salt, or to taste
- Utazi leaves (Gongronema latifolium) for garnish
- 2 tbsp (30 ml) water (as needed while tossing)

Instructions

1. Place the cow foot chunks in a large pot, cover with water, add a pinch of salt and the bouillon cube, then simmer gently until very tender, about 2 to 3 hours (or pressure cook 45–60 minutes). Drain, reserving 1 cup (240 ml) of the cooking liquid; set meat aside.
2. In a small bowl, mix the dissolved potash solution with 2 tbsp (30 ml) of the reserved cooking liquid; strain to remove grit and set aside.
3. Heat the palm oil in a skillet over medium heat until fluid and slightly shimmering. Remove from heat and slowly whisk in the potash-cooking liquid mixture; the oil will thicken and change to a glossy, deep orange-red.
4. Return the skillet to low heat, add the ground crayfish, ground calabash nutmeg, ground white pepper, and chopped scotch bonnet peppers; cook gently 1–2 minutes to bloom the flavors.
5. Add the drained, tender cow foot chunks to the spiced oil, toss to coat, and add up to 2 tbsp (30 ml) water if mixture seems dry. Cook together 4–6 minutes so the meat soaks the sauce; adjust salt to taste.
6. Stir in the finely chopped red onion, then transfer to a serving bowl. Garnish with sliced white onion and utazi leaves. Serve warm, traditionally in a wooden bowl with chilled palm wine or beer.
