Ingredients

- 4 cups (about 800 g) cooked long-grain rice, preferably day-old and chilled
- 1 lb (454 g) goat meat, trimmed and thinly sliced or shredded
- 3 tbsp (45 ml) vegetable oil, divided
- 4 small (about 80 g) shallots, thinly sliced
- 3 cloves (about 9 g) garlic, minced
- 2 bird’s eye chiles or 1–2 tbsp (15–30 g) sambal oelek, chopped (adjust to heat preference)
- 3 tbsp (45 ml) kecap manis (sweet soy sauce)
- 1 tbsp (15 ml) light soy sauce
- 1 tsp (2 g) ground coriander
- 1/2 tsp (1 g) ground white pepper
- 2 large eggs (about 100 g), lightly beaten
- 3 scallions (about 45 g), sliced on the bias
- 1/2 cup (70 g) bean sprouts (optional)
- 1 small cucumber, thinly sliced, for serving
- 1/4 cup (30 g) crispy fried shallots, for garnish
- Lime wedges, for serving
- Salt to taste

Instructions

1. If goat is not yet cooked, heat 1 tbsp (15 ml) oil in a skillet over medium-high heat. Sear the goat slices until browned and cooked through, about 6–8 minutes. Season lightly with salt and set aside. (Alternatively use pre-cooked shredded goat warmed briefly.)
2. In a large wok or heavy skillet, heat remaining 2 tbsp (30 ml) oil over high heat. Add sliced shallots and stir-fry until fragrant and translucent, about 2 minutes. Add the garlic and chopped chiles and stir 30 seconds.
3. Push aromatics to the side of the wok. Pour in beaten eggs and scramble quickly until just set, then mix with the aromatics. Add the cooked goat and stir to combine.
4. Add the chilled rice, breaking up any clumps, and toss to combine. Stir in kecap manis, light soy sauce, ground coriander, and white pepper. Continue stir-frying until rice is evenly coated and heated through, about 3–5 minutes.
5. Fold in scallions and bean sprouts (if using). Taste and add salt or extra kecap manis for sweetness if needed.
6. Serve the nasi goreng kambing hot, topped with crispy fried shallots and lime wedges, with cucumber slices on the side.
