1. Combine ground bison, salt, pepper, Worcestershire sauce, and chopped onion in a bowl; mix gently until just combined. Form into four 4-oz (approx. 113 g) patties, making a slight indentation in the center of each to prevent doming. 2. Preheat a grill or heavy skillet over medium-high heat and brush grates or pan with oil. 3. If using maple syrup glaze, brush a thin layer on patties during the last minute of cooking. 4. Grill patties 3–4 minutes per side for medium-rare to medium (adjust time for desired doneness); place a slice of cheddar on each patty in the final 30–60 seconds to melt. 5. Toast buns cut-side down on the grill or skillet until lightly golden, about 30–60 seconds. 6. Assemble burgers: spread 1 tsp (5 ml) mayonnaise on bottom bun, add lettuce, burger with cheese, tomato slice, 1/2 tsp (2.5 ml) ketchup and 1/2 tsp (2.5 ml) mustard on the top bun; close and serve immediately.
